It may sound dirty, but the tourtiere is a traditional savoury pie from the province.
Bringing the treat to New York is meat-pie ambassador Hugue Dufour, a Canadian chef and alum of Montreal's world-renowned restaurant Au Pied de Cochon. He's partnered with Heritage Foods USA for holiday orders.
Each pie is unique, its filling based on availability (but usually a combination of pork, brisket, turkey, venison and guinea fowl). Pies come with a jar of homemade cranberry ketchup, a foil for the meaty richness of the pie.
